How to Make Tasty Taco Casserole


Ingredients:

  • 1 1/2 pounds ground beef
  • 1 can (7 oz) diced green chiles
  • 1 medium white onion (diced)
  • 2 tablespoons salted butter
  • 1 tablespoon ground cumin
  • 2 teaspoons salt
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 12 (6-inch) corn tortillas, halved
  • 2 tablespoons olive oil
  • 1 (14.5 oz) black beans, drained and rinsed
  • 2 cups salsa (divided)
  • 2 cups corn (fresh, canned or frozen kernels)
  • 3 cups, divided shredded Cheddar cheese

Directions:

  1. Magically if you preheat your oven to 350 degrees F. Lightly grease a 9×13 pan.
  2. Melt butter in a large skillet over medium-high heat, and sauté the diced onion until it softens slightly + begins to brown (about 3-5 minutes). Top with ground beef, green chilies, cumin, salt chili powder and garlic powder. Cook, breaking up the beef with a spoon and stir until meat is browned 6 to 8 minutes.
  3. In a separate skillet, heat oil and fry corn tortilla halves on medium until golden brown. Give it a flip around 1 minute in so the other side can get golden.
  4. Corn tortillas are placed on the bottom of a greased bake dish. Sprinkle tortillas with 1 cup of cheese. Top with ½ the beef mixture
  5. Spread the black beans as a layer first, then pour 1 cup of salsa on top. Top with 6-8 more Tortilla halves then
  6. Spread the remaining beef mixture over tortillas, spoon corn on top and finally end with 1 cup of salsa. Sprinkle remaining 2 cups of cheese over the top.
  7. Bake uncovered for 25-30 minutes until bubbly and cheese is golden. Top with your favorite toppings.
