A coffee cake is what you served to neighbors stopping by, or brought on a tray of every flavor out halfway through a morning meeting (sour cream!) at an inn. This baby has the best texture (and it stays moist AF) and is so flavorful, I will definitely be making this for brunches or teatime (or just as a snack any time of day LOL). Because of how simple it is to put together, anyone can have a slice!

Why Make This Recipe

I love this recipe for a number of reasons. For starters, it’s super quick to throw together–as in not all-day-long-in-the-kitchen. The second reason why it is so great to use some sour cream in this recipe, because it makes this cake more moist and basically absolutely irresistible. This is also a kid friendly recipe! Kids to grandparents, it is such a delicious cake that everyone would love I bet. Which is just right for those lazy weekends or whenever you feel like pampering yourself.

Sour Cream Coffee Cake Recipe

Ingredients:

  • 1 cup sour cream
  • 1 cup sugar
  • 1/2 cup unsalted butter, room temperature
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 c chopped nuts (optional)

Directions:

  1. Not much, just preheat your oven to 350F. Preheat oven to 350 degrees F (175 degrees C); grease and flour a 9×13 inch baking pan.
  2. Cream the butter and sugar together until light an fluffy in a large bowl. Mix in the eggs one at a time then blend in vanilla and sour cream.
  3. In a separate bowl mix flour, baking powder and soda, salt & cinnamon.
  4. Add dry ingredients to wet ingredients and stir until formulas arecombined.
  5. Spoon half of the batter into the prepared baking pan. Pour half the batter into one cake tin and another to the second, then sprinkle over half of nut mixture (if using) top with rest of mix.
  6. Bake 30-35 minutes or until a toothpick inserted into the center of the cake comes out clean. Allow to cool before serving.

How to Serve Sour Cream Coffee Cake

Best served warm or at room temperature, enjoy your Sour Cream Coffee Cake! Summation: Good eaten alone, but even better with coffee or tea. You can also sprinkle powdered sugar on top of it to make the surface look more beautiful.
