This Eggnog Cheesecake basically takes the flavors of my favorite eggnog ever, and stuffs it into a rich cream cheese dessert. It is warm for the holiday season and can be prepared with great ease. And bonus — it’s a perfect way to use up any leftover eggnog!
How to Make Eggnog Cheesecake
Ingredients:
- 1 ½ cup graham cracker crumbs
- ½ cup sugar
- ½ cup unsalted butter, melted
- 8 oz pkgs cream cheese, softened (4)
- 1 cup sugar
- 1 cup eggnog
- 4 large eggs
- 1 tsp vanilla extract
- ½ tsp ground nutmeg
Directions:
- Instructions Preheat oven to 325°F (160°C).
- Combine graham cracker crumbs, ½ cup sugar and melted butter in a bowl Firmly press this mixture into the bottom of a 9-inch springform pan.
- In a standing mixer, soften the cream cheese and beat until smooth. Add 1 cup sugar
- Stir in the eggnog, eggs, vanilla and nutmeg. Mix until just combined.
- Spread the cheesecake mixture over top of crust in pan.
- Place in the oven and bake for 50-60 minutes or until firm in the center.
- Transfer to a plate and cover with cling film, or store in an air-tight tin.
- Refrigerate for 4 hours or overnight.
