Slow Cooker Beef Short Ribs

Ingredients:

  • 2-3 pounds beef short ribs
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf

Directions:

  1. Start by seasoning the beef short ribs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Brown beef short ribs on all four sides and then transfer them to the slow cooker.
  4. In another skillet, add chopped onion and garlic until they are soft.
  5. Add the broth, soy sauce, sugar and Worcestershire along with thyme and bay leaf; stir to combine.
  6. Add the onions to it and then pour over everything in slow cooker.
  7. And I left it in the fridge overnight before using leftover and great for Boxing day; cover & cook on low 6-8hrs or till meat is tender.
  8. To serveServe the short ribs in bowlsalong with most of the cooking liquid, which has become a very unctuous sauce.
