Raspberry Pistachio Macarons

Ingredients:

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • 1/4 cup raspberry puree
  • 1/2 cup unsalted butter- softened
  • Powdered sugar, 1cup (filling)
  • Topped with crusted pistachios, 1/4 cup

Directions:

  1. Bake: Preheat the oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift together a bowl of almond flour with powdered sugar in a separate dish.
  3. In a seperate bowl whisk egg whites with tartar till foamy Add the granulated sugar slowly whilst beating until stiff peaks.
  4. In 3 additions, carefully and gently fold the almond flour mixture into egg whites.
  5. Fold gently to combine then add vanilla extract and raspberry puree.
  6. Spoon the mixture into a piping bag and pipe small rounds onto 1/2 of each sheet.
  7. Rap baking sheets against the counter to release any air bubble and let macarons sit at room temperature for 30-60 minutes.
  8. Place in the oven and bake for 15-18 minutes (or until set on top, lifts easily off of parchment paper).
  9. Let cool completely on the baking sheets.
  10. Spread a little softened butter and icing sugar onto half of the macarons for the filling, then pipe with shaped nozzle on top; sandwich them together using other halves.
  11. Top with crushed pistachios and allow to sit 24 hours before serving for the most flavor.

How to Serve Raspberry Pistachio Macarons

Arrange these macarons in a serving platter. They are a fantastic sweet at any party. Just Serve them with tea/coffee and have a cozy afternoon bite.
