Ingredients:

 

  • 12 oz semisweet or dark chocolate chips
  • 1½ cups whipping cream, divided
  • 1/2 teaspoon instant espresso powder or a pinch of finely ground coffee, optional but intensifies the chocolate flavor!
  • ¼ cup sifted powdered sugar
  • 1 tablespoon vanilla extract
  • ¼ teaspoon salt
  • One 9-inch prepared store-bought chocolate cookie crumb crust (see notes for recipe to make your own from scratch)
  • Whipped cream and chocolate shavings for garnish, optional

Directions:

 

  1. Mix chocolate chips and half of the cream in a microwave safe It is easy to stir if you use rectangular dishes. Cook on HIGH for 1-2 minutes, stirring every 30 seconds until smooth.
  2. Add the espresso powder, if using. Cool down to room temperature. Combine with sifted powdered sugar andv vanilla. Set aside.
  3. Beat the remaining cream with an electric mixer in a medium bowl until soft peaks form. Add the chocolate mixture in 1/3 batches and beat on high.
  4. Pour the chocolate cream over into crust.
  5. Chill for at least 8 hrs overnight before serving.
  6. Enjoy with a dollop of whipped cream and maybe some chocolate shavings, if you want to be extra!
