Ingredients
- 1 pound fresh Mussels
- 1 Tablespoon Vegetable Oil
- 1 Shallot, chopped
- 1 Poblano Pepper, chopped
- 2 Cloves Garlic, chopped
- 1/2 pound Ground Chorizo
- 1 tbsp Panca Peruvian style hot pepper paste
- 1 can Roasted Tomatoes
- 1/2 cup Seafood or Chicken Broth
Directions

- Place vegetable oil in a dutch oven or cast iron skillet over medium heat. Throw in the diced shallots, poblano peppers and garlic. Cook for 2 to 3 minutes; sauté until you can smell the garlic and ginger.
- Add the chorizo. Cook and stir until fully cooked, about 5-7 minutes . Add the panca pepper paste (to taste).
- Stir in the roasted tomatoes and broth. Bring everything to a boil.
- Turn down the heat to low and leave broth on a simmer. Finally, add the mussels. Turn off the heat and allow to steam for a few more minutes, covered.
