Ingredients:

  • 2 pounds Yukon Gold potatoes, peeled and cut into 1-inch pieces
  • 3 tablespoons salted butter, melted
  • 1 tbs extra-virgin olive oil
  • 2 tsps fresh chopped thyme
  • 2 tsp chopped fresh rosemary
  • ¼ teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup low-sodium chicken or vegetable broth
  • 5 garlic cloves, smashed


Directions:

  1. Preheat the oven to 450°F.
  2. Combine the butter, olive oil, thyme and rosemary in a large bowl then add the potatoes; toss until well coated.
  3. Place potatoes in the bottom of an oiled 9×13-inch baking dish. Spread them out into one even layer
  4. Roast in the over for 30 minutes (turn them once) or until they are evenly brown.
  5. Throw the broth in over top of your smushed garlic cloves.
  6. Step 4Roast for another 15 minutes, or until the broth is mostly absorbed and the potatoes are very soft.
  7. Serve hot with the pan juices drizzled on top.
