Lemon Meringue Pie Recipe

Here’s how you can make this tasty dessert from scratch!

Ingredients:

  • 1 pre-made pie crust
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 large egg yolks
  • 1/2 cup of lemon juice (freshly Squeezed)
  • 2 teaspoons lemon zest
  • 2 tablespoons butter
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar

Directions:

  1. Instructions: Preheat oven to 350°F (175°C).
  2. Mix sugar, cornstarch and salt in a saucepan. Gradually whisk in water. Cook and STIR CONSTANTLY over med heat until thick.
  3. Combine egg yolks and lemon juice in a bowl. Gradually whisk some of the hot mixture into egg yolks to temper, then return all to saucepan.
  4. Cook 2 minutes more until filling is thick. Add lemon zest and butter.
  5. Fill a pre-baked pie crust with the filling.
  6. Using the bowl of your stand mixer, whip egg whites and cream of tartar to soft peaks. Beat until stiff, slowly adding sugar.
  7. Grate a mound of meringue over the lemon, making sure to reach right to the edges so that it sticks across its entirety.
  8. Bake for 10–12 minutes or until meringue is golden.
  9. Allow to cool, and then chill in the refrigerator before serving.
