Honey Balsamic Roasted Carrots
Ingredients:
- 1 pound baby carrots
- 2 tablespoons honey
- 2 tbsp balsamic vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herb for garnish, optional
Directions:
- Preheat oven to 400°F (200°C).
- Combine in a large bowl: honey, balsamic vinegar, olive oil, salt + pepper
- Place the baby carrots into a bowl and mix until everything is evenly coated.
- Spread the carrots in 1 layer on a baking sheet.
- Bake in the preheated oven for 20 to 25 minutes, stirring halfway through or until carrots are tender and caramelized.
- Take out of the oven, top with fresh herbs (optional), and serve warm.
