How to Make Healthy Almond Joy Smoothie

Ingredients:

  • 1½ cups (360 mL) light coconut milk
  • 3 Medjool dates (pitted)
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons natural almond butter
  • 2 tablespoons toasted unsweetened shredded coconut
  • ¼ teaspoon vanilla extract
  • ½ frozen banana
  • 4-5 coconut water ice cubes (or regular ice cubes)
  • melted dark chocolate
  • toasted honey-roasted almonds (or regular sliced almonds)
  • toasted unsweetened shredded coconut
  • whipped coconut cream

Directions:

  1. Combine the smoothie ingredients in order in a large high-powered blender, like a Vitamix. Blend until very smooth and no lumps are visible. Pour into a large rimmed glass.

  2. Optional Garnishes: On a small plate, mix together chopped toasted sliced almonds and toasted shredded coconut. Melt some good-quality dark chocolate and let it cool slightly. Lightly dip the rim of your glass into the chocolate, then into the almond-coconut mixture. If your chocolate is too runny, refrigerate it to let it set a bit. Once done, pour in your smoothie and top with extra sliced almonds, shredded coconut, or coconut whipped cream if you like. Serve and enjoy!
