Granola Cups

How to Make Granola Cups
Granola cups are easy and fun to make. Ingredients: Ready to go!
Ingredients:
- 1/4 cup unsalted butter
- 1/2 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- Directions:1/2 teaspoon salt, or to taste
- 1/4 teaspoon ground nutmeg
- 2 cups old fashioned oats
- 1/2 cup sliced almonds
- 1/2 cup flaked coconut (see note)
- 2 tablespoons flax meal
- Nonstick spray with flour
- Approximately 1 cup of plain whole milk Greek yogurt (or any alternative)
- Fresh berries
Directions:
- In a large bowl combine the butter and maple syrup. Keep micro waving for 30 seconds at a time. Stir after each interval until the butter is completely melted. This should be done in a minute or so.
- Once melted add the vanilla, cinnamon, salt & nutmeg. Mix well until combined.
- Add the oats, almonds, coconut and flax meal. Combine the mixture properly.
- Use nonstick baking spray with flour to generously grease a muffin tin.
- Portion out the oat mixture among all of the muffin cups, roughly 2 heaping tablespoons each. Press the mixture into each cup (bottom + sides) with wet hands.
- Let the pan set in the refrigerator for 15-minutes.
- Heat your oven to 350°F (175°C).
- Bake the granola cups in a preheated oven at 180C for about 25 to 30 minutes, or until the edges are brown. Allow the bars to cool in pan for ~30 minutes.
- Pop the granola cups out with an offset spatula, or a butter knife.
- Fill them with yoghurt and fruits.
