Easy Morning Glory Muffins Recipe
These muffins come together in a flash. Just a simple few steps and your house will smell amazing with freshly baked muffins.
Ingredients:
- 2 cups all-purpose flour
- 1.25 cups white sugar
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 0.25 teaspoon salt
- 2 cups shredded carrots
- 1 apple, peeled cored and shredded
- 0.5 cup raisins
- 0.5 cup chopped walnuts
- 1/2 c unsweetened flaked coconut
- 3 large eggs
- 1 cup vegetable oil
- 2 teaspoons vanilla extract
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Spray a 12-cup muffin tin with cooking spray or line with paper liners.
- Mix flour, sugar, baking soda, cinnamon and salt in a large bowl Add the carrots, apple, raisins coconut and walnuts.
- Mix the oil and vanilla extract together then add to eggs.
- Mix it all up together so the egg, nuts & carrot are evenly distributed and only stir until just moistened. Don’t overmix!
- Spoon batter into muffin cups, filling about two-thirds full.
- Place in the oven to back for 20 minutes, or until they are no longer jiggly when you press down on them. Cool in the tin for 5 minutes and then transfer to a wire cooling rack.
