Easy Crustless Spinach Quiche Recipe
Ingredients:
- 2 cups fresh spinach, chopped
- 1 medium sweet onion, diced
- 1 cup mushrooms, sliced
- One cup cheddar cheese, shredded
- 1 cup feta cheese, crumbled
- 4 large eggs
- 1 cup milk
- Salt and pepper to taste
- Olive oil for sautéing
Directions:
- To bake:Preheat oven to 375°F (190°C) .
- Heat the olive oil in a skillet over medium heat. And diced onion, and sliced mushrooms. Cook, stirring occasionally until the onions are softened.
- Put the spinach in and finely chop it to add. Stir in spinach and cook until wilted.
- Beat the eggs, milk, salt and pepper together in a bowl until smooth.
- Add the sautéed vegetables and both cheeses in with to egg mixture.
- Spoon into a greased quiche dish or pie plate.
- Bake for 25-30 minutes, until the quiche is set and slightly golden on top.
- Cool for a minute or two before slicing & serving.
