Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized chunks
- 1 can (13.5 oz) coconut milk
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- Salt and pepper to taste
- Fresh cilantro for garnish
Directions:
- Preheat olive oil in a large skillet over medium heat.
