Creamy Tuscan Chicken Recipe

Ingredients

  • 2 chicken breasts
  • 1 cup fresh spinach
  • 1/2 cup sun-dried tomatoes
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil

Directions

  1. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt and pepper, then fry on both sides until golden brown and cooked through the middle (about 6-7 minutes each side). Transfer to a place and set aside.
  2. Wipe out the skillet and add garlic; cook until fragrant.
  3. Stir in drained sun-dried tomatoes and fresh mushrooms; cook for 3 to 4 minutes, or until the vegetables are softened.
  4. Add heavy cream, simmer. I threw a handful of parmesan cheese on top to melt it into the warm risotto.
  5. And throw in the spinach right on top to wilt down into your sauce.
  6. Add the chicken back to the skillet and coat with creamy sauce.
  7. Serve warm and enjoy.
