Best Blueberry Muffins Ever


These muffins are a snap to make! If you follow along, warm and fluffy muffins are just a few steps away.

Ingredients:

  • 1/2 cup butter (softened)
  • 1 cup granulated sugar
  • 2 eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup milk
  • 2 1/2 cups fresh blueberries
  • To top: 1/4 cup of granulated sugar

Directions:

  1. Oven: 375°F/190°C (be certain to line your muffin tin and lightly spray with nonstick cooking spray!)
  2. Using a hand mixer, cream well the softened butter and granulated sugar in large mixing bowl for about 2 minutes.
  3. Mix in the eggs until thoroughly combined. Next, add the baking powder, salt and vanilla mixing just briefly.
  4. Stir in half of the flour until just combined. Next, add in half the milk. Scrape bowl and add in rest of flour, then the milk mix between each addition.
  5. Use a rubber spatula to gently fold the fresh blueberries into the mix.
  6. Spoon the batter into all 12 muffin cups, and sprinkle about a teaspoon of sugar per muffin.
  7. Place in the preheated oven and bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool the muffins in pans for 5 minutes and then transfer to a wire rack.
