How to Make Beef Barbacoa

Ingredients:

  • 2 pounds beef chuck roast
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 3 hot chiles (i.e., jalapeño, poblano, chipotle)
  • 2 tablespoons lime juice
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • Salt and pepper to taste

Directions:

  1. Combine hot peppers, onion and garlic with beef broth plus lime juice in a blender. Add cumin, oregano salt & pepper; blend until almost smooth Blend until smooth.
  2. Add the beef chuck roast to a slow cooker and pour in the blended sauce over top of it.
  3. Cook on low for 8 hours or until the beef is tender and shreds easily with a fork.
  4. Then, take out the beef from your slow cooker and shred it with two forks.
  5. Shred the cooked beef and serve in tacos, burritos or over a plate with whatever side you want.
