How to Make Beef Barbacoa
Ingredients:
- 2 pounds beef chuck roast
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 3 hot chiles (i.e., jalapeño, poblano, chipotle)
- 2 tablespoons lime juice
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- Salt and pepper to taste
Directions:
- Combine hot peppers, onion and garlic with beef broth plus lime juice in a blender. Add cumin, oregano salt & pepper; blend until almost smooth Blend until smooth.
- Add the beef chuck roast to a slow cooker and pour in the blended sauce over top of it.
- Cook on low for 8 hours or until the beef is tender and shreds easily with a fork.
- Then, take out the beef from your slow cooker and shred it with two forks.
- Shred the cooked beef and serve in tacos, burritos or over a plate with whatever side you want.
