Ingredients:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup melted unsalted butter
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup ground pistachios
- Chopped pistachios for topping (1/4 cup)
Directions:
- Heat your oven to 350 degrees F and set out a muffin tin with paper liners.
- Combine the flour, sugar, baking powder and soda in a wide mixing bowl.
- Combine the melted butter, eggs, milk and vanilla extract in a second bowl.
- Add the wet ingredients to the dry a little at a time and mix until just combined, then gently stir through ground pistachios.
- Scoop the batter equally into the muffin cups, 3/4 full.
- Sprinkle with a great crunchly of chopped pistachios on top of each muffin.
- Bake 18-20 minutes or until a toothpick inserted into center does not contain any batter.
- Cool in the pan for several minutes, then turn out onto a rack to cool fully.
