Decadent Lemon Blueberry Cheesecake Recipe

Ingredients:

  • Graham cracker crumbs (1 1/2 cups)
  • 1/2 cup unsalted butter (melted)
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 cup fresh blueberries

Directions:

  1. Preheat the oven in 325°F (160°C).
  2. Mix cracker crumbs in a bowl with melted butter to combine. Firmly press this mixture into the bottom of a 9-inch springform pan in an even layer.
  3. In a large bowl, beat the cream cheese and sugar until smooth.
  4. Vanilla, eggs one at a time with the sour cream and lemon juice then add for that brightness to remind you of spring some good old fashioned lemon zest. Mix well together until everything is combined.
  5. Gently fold in blueberries.
  6. Carefully fill the springform pan with the batter over top of your crust.
  7. Bake for approximately 60 minutes or until the center no longer moves.
  8. Cool completely and refrigerate for a minimum of 4 hours before serving.

How to Serve Decadent Lemon Blueberry Cheesecake

No-bake cheesecake is such a simple and easy dessert to make which requires very little prep time, occasionally the longest process afterwards is waiting for it set decided to chill out in the fridge.
