How to Make Pumpkin Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup pumpkin puree
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Directions:

  1. Combine flour, light brown sugar, baking powder,baking soda,salt,,cinnamon and nutmeg in a medium mixing bowl.
  2. Mix the pumpkin puree, milk and egg together in a separate bowl with the melted butter and vanilla extract
  3. Add the wet mixture to this dry mix and stir until JUST combined Be careful not to overmix!
  4. Place a griddle or frying pan over medium heat and warm up, then grease it with some butter or oil.
  5. Pour 1/4 cup of batter per pancake onto the griddle.
  6. Cook until it has bubbles on top, then flip and cook the other side.
  7. Place it in the syrup, and serve warm with other toppings you like.

How to Serve Pumpkin Pancakes

Hot fluffy pumpkin cakes from the griddle with maple syrup, whipped cream or your favorite fruits. Or, top with a sprinkle of cinnamon or dollop of yogurt for an extra tasty treat!
