Beet Salad with Orange-Balsamic Vinaigrette Recipe

Ingredients:

  • 4 servings cooked beets, peeled and diced
  • 1¾ to 2 cups arugula or mixed greens
  • 1/4 cup goat cheese, crumbled
  • 1/4 cup walnuts, chopped
  • 1/4 cup sliced red onions
  • 1/4 cup orange juice
  • 2 tbsp balsamic vinegar
  • 1/4 cup olive oil
  • Salt and pepper to taste

Directions:

  1. Toss beets, arugula, goat cheese and walnuts in a large bowl.
