One of those ingredients is Cobb Salad, which also combines several tasty elements into a single dish. This is vibrant, nutritious and a great little light lunch(es) as well. A wonderful recipe for lunch or easy dinner.

You need to make Cobb Salad because it is full of healthy protein and good fats. The chicken and hard boiled eggs will give you that protein to keep you full, but all the veggies in this salad make it very light so after this meal (even 2 portions), your tummy won’t feel heavy. And, it makes a fun way to get in lots of flavors all in one bowl!

How to Make Cobb Salad

Ingredients:

  • 2 cups chopped cooked chicken
  • 1 cup cherry tomatoes, halved
  • 4 sliced cooked bacon, crumbled
  • 2 hard-boiled eggs, chopped
  • 1 cup blue cheese, crumbled
  • 2 cups mixed greens
  • 1/4 cup olive oil
  • 2 TBSP red wine vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Directions:

  1. Toss chopped chicken, tomatoes, bacon, eggs,, blue cheese and the mixed greens with your dressing.
  2. To prepare vinaigrette whisk olive oil, red wine vinegar, Dijon mustard and salt & pepper in a small bowl.
  3. Add the Vinaigrette and Toss
  4. Serve immediately.
