Fresh Berry Chantilly Cake Recipe

The Fresh Berry Chantilly Cake is literally a cake in 1-2-3. All you have to do is gather your ingredients and follow me along the road, next thing will be holding a masterpiece of a cake in your very own hands.

Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1/2 cup unsalted butter, room temperature
  • 1 cup milk
  • 3 large eggs
  • 2 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • Fresh Mixed Berries (strawberries, blueberries, raspberries) 2 c.
  • 1 ½ cups mascarpone cheese
  • 1 cup heavy whipping cream
  • ½ cup powdered sugar
  • 1 tsp. vanilla extract (for the cream)

Directions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, beat together butter and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, scraping the bowl between each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine flour baking powder and salt. Add to creamed mixture with milk in small amounts, beginning and ending with flour.
  5. Evenly divide the batter among the prepared pans and spread it gently to level.
  6. Bake for 25-30 min or until a tooth pick comes out clean. Cool the cakes in pans on wire racks for 10 minutes before removing to cool completely.
  7. To make the Chantilly cream, whisk all of mascarpone cheese, heavy whipping cream, powdered sugar and vanilla extract in a bowl. Beat until soft peaks form.
  8. When the cakes have cooled, place one layer on a serving dish and spread some Chantilly cream over it. Top with fresh berries.
  9. First place the second layer on top and do more chantilly cream and berries.
  10. Fresh Berry Chantilly Cake is ready to be served and enjoyed.
