The Ultimate Carrot Cake Recipe
Ingredients:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup vegetable oil
- 4 large eggs
- 2 cups grated carrots
- 1lg. can crushed pineapple (well drained)
- 1 cup walnuts finely chopped (optional)
- 1 8-ounce package of cream cheese, at room temperature
- 1/2 cup unsalted butter, at room temperature
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Directions:
- Heat your oven to 350°F (175°C). INGREDIENTS: Grease and flour two 9” round cake pans.
- Start off by whisking together the flour, sugar, baking soda, cinnamon and salt into a bowl.
- In a separate bowl, beat vegetable oil, eggs and crushed pineapple until smooth. Fold in grated carrots.
- Add the wet ingredients, a little at a time to the dry and mix until just combined. Fold in chopped walnuts, if using.
- Divide batter evenly among prepared cake pans.
- Bake in a 25-30 mins or until toothpick inserted into center comes out almost clean. Allow cakes to cool in the pans for 10 minutes, then turn them out onto wire racks to completely cool.
- Place cream cheese with butter which was brought to a room temp till smooth for frosting. Mix together the powdered sugar and vanilla, adding slowly if it gets too thick or is still runny.
- Allow the cake layers to cool completely, frost the one layer on top and add a second layer then spread frosting overtop of that with remaining half cup being used to ice the sides. Have your yummy carrot cake!
