How to Make Cheesy Quesadillas with Creamy Sauce & Pico de Gallo
Ingredients:
- 8 flour tortillas
- 1 cup cheese, shredded (like cheddar, Monterey Jack or a mix)
- Ground beef or chicken (cooked), 1/2 cup
- 1/4 cup chopped onion
- 1/4 C chopped green bell pepper
- 1 tablespoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for cooking
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon chopped cilantro
- 1 clove garlic, minced
- 2 tomatoes, diced
- 1/4 red onion, diced
- 1/4 cup chopped cilantro
- 1 Jalapeño, Seeded and Minced (Optional)
- 1 lime, juiced
- Salt and pepper to taste
Directions:
- Prepare the Filling: In a large pan, brown meat in onion and bell pepper. Add some chili powder, cumin, salt & pepper.
- Build the Quesadillas: Lay a tortilla on your griddle or skillet. Cheese on top and add the meat filling. Place another tortilla on the top. Place over medium heat until the cheese has melted and tortilla is golden brown. Flip and cook until the flip side is golden brown as well.
- Prepare Creamy Sauce: stir mayonnaise, sour cream, cilantro , garlic powder together with salt + pepper ( and chili if you like it spicy) in a small bowl
- Prepare the Pico de Gallo: in a bowl, mix together diced tomatoes red onion jalapeño (if using), cilantro lime juice salt pepper Stir stir to combine those fresh flavors together.
- Serve: Slice the quesadillas into wedges and serve hot with creamy sauce and pico de gallo. Enjoy every cheesy bite!
