Grilled Chicken Skewers with Peanut Sauce & Scallions

Ingredients:

  • boneless, skinless chicken breasts1 lb. cut into 1-inch cubes
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 teaspoon red pepper flakes
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • Optional 1/4 teaspoon red pepper flakes
  • 1/4 cup water (more to thin if necessary)
  • Scallions for garnish

Directions:

  1. For the chicken: In a large bowl, combine chicken cubes with soy sauce, honey, sesame oil, garlic powder and season with salt and pepper then toss to coat. Add red chili flakes for some heat if you wish. Marinate Chicken (for at least 30 minutes) You should also allow it to marinate for at least an hour in the refrigerator, or up to 2 hours which will provide even more flavor.
  2. Skewers on the Grill: Thread chicken cubes onto skewers after marinating. Place onto the grill over med heat and cook about 5-7 minutes per side until they are cooked through.
  3. Prepare the Peanut Sauce: While your chicken is on the grill, you have enough time to make a quick little peanut sauce. Or make it (even quicker) in a blender or food processor with the remaining ingredients: peanut butter, soy sauce, rice vinegar and honey – plus sesame oil for added depth of roasted flavor along with garlic to give it alluring aroma-and some minced red pepper flakes if you are feeling spicy. Blend until smooth. If needed, add more water until you get the desired consistency.
  4. Serve: After the chicken is done cooking, serve over a bed of rice with peanut sauce drizzled on top. Garnis with fresh scallions, and enjoy!
