Air Fryer Eggplant
Ingredients
- Thin slice a 1 eggplant
- ½ teaspoon Kosher salt
- 1 egg
- ½ cup panko breadcrumbs
- ⅓ cup all-purpose flour
- ½ teaspoon Italian seasoning
- ¼ teaspoon garlic powder
- ¼ cup grated parmesan cheese
Directions
- Begin by sprinkling ½ teaspoon of Kosher salt over the eggplant slices on both sides. Place in a paper towel for 20 min, to absorb some of the wetness. Be sure to flip them half way through!
- In a small bowl, crack 1 egg and set aside.
- In another bowl, combine the panko breadcrumbs with all-purpose flour and Italian seasoning garlic powder grated parmesan cheese. This will be your crispy outside.
- One by one, dip eggplant slices into egg mixture coating on both sides. Dip your eggplant into the flour mixture so it is completely coated and then rolls it in panko mix. Set these on a plate fully covered with the fried slices.
- Lay the eggplant slices out in a single layer onto air fryer basket. Just a simple spray of olive oil on both sides.
- Bake the eggplant for 15-20 minutes at 375 degrees, until gloriously golden brown. Combine and arrange them halfway through the cooking process. If you have a lot of slices, fry them in portions.
- Serve with marinara sauce and you are good to go!

Shake things up Sub out your herb of choice (I like oregano or thyme) for a panko breading running low. In the mood for a little spice, top it with chili flakes.
