  • 2 whole bay leaves

  • ¼ teaspoon ground nutmeg
  • 1 cup sherry vinegar
  • ½ pound smoked bacon, chopped
  • 1 cup chopped yellow onion
  • ½ cup chopped celery
  • ½ cup chopped carrot
  • 16 oz dried black beans, rinsed
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 medium tomatoes, quartered
  • 1 ½ Tbsp minced canned chipotle peppers in adobo sauce
  • 1½ teaspoons salt
  • 1 tablespoon sherry vinegar
  • ½ cup heavy whipping cream

Directions

 

  1. Make the Soup: In a large Dutch oven, cook the bacon bits until crispy. Remove bacon and set aside on paper towels; save 2 tablespoons of the drippings in the pan.
  2. Continue stirring and add the sliced onion, celery and carrot to cook for about 5 minutes or until vegetables are tender.
  3. To the pot, add 2½ quart of water, black beans,cumin,chili powder , quartered tomatoes and chipotles. Bring everything to a boil.
  4. Bring to a high simmer, then reduce the heat to medium and cook for 1½ hours. Skim off any foam that forms. Add the salt and vinegar for the last 5 minutes of cooking.
  5. When ready, take off the heat and stir in your cream. Puree the soup until smooth using an immersion blender
  6. Serve each bowl topped with a spoonful of Rock Shrimp Escabeche for extra flavor.
